Frozen Mai Tai
A tiki-bar frozen Mai Tai with aged rum, orange liqueur, orgeat and lime, crowned with a dark rum float.
- 5 min prep
- 2 drinks
- Double old-fashioned or tiki mug
The original Mai Tai is a lime and rum drink sweetened with orgeat, a creamy almond syrup. It's not the pineapple-punch version many resorts serve, and once you try the real thing it's hard to go back.
Blended, it becomes a nutty, citrusy slush that's both refreshing and complex.
Frozen Mai Tai
Ingredients (2 drinks)
- 3 oz aged or gold rum
- 1 oz orange liqueur
- 2 oz fresh lime juice
- 1 oz orgeat (almond syrup)
- ½ oz simple syrup
- 3 cups ice cubes
- 1 oz dark rum to float
Instructions
- Add the aged rum, orange liqueur, lime juice, orgeat and simple syrup to the blender.
- Add the ice and blend on high for 30–40 seconds.
- Pour into two double old-fashioned glasses or tiki mugs.
- Float ½ oz dark rum on each and garnish with a mint sprig and a spent lime shell.
Garnish: Mint sprig and lime shell
Glass: Double old-fashioned or tiki mug
Tips for the best texture
- Slap the mint against your hand before garnishing to release its aroma.
- Orgeat is the key ingredient; look for it near the coffee syrups or online.
Try a twist
Add 2 oz pineapple juice for the fruitier resort-style version.
Blender, frozen drink maker or slush machine?
These amounts are written for a standard countertop blender. In an ice-shaving frozen drink maker, put the ice in the hopper and the liquids and any fruit in the jar, then run a full cycle. In a home slush machine, which freezes the drink itself, leave out the ice, replace it with about 1 cup of cold water or juice, and pour the mixed liquid into the bowl.
