Frozen Peach Bellini
Peach purée and prosecco turned into an elegant frozen brunch drink.
- 5 min prep
- 2 drinks
- Champagne flute or coupe
The Bellini is Venice's famous mix of white peach purée and prosecco. Frozen, it's like a peach sorbet with sparkle, perfect for brunch or a bridal shower.
The prosecco goes on top in the glass so it stays bubbly; only a little goes into the blender for flavor.
Frozen Peach Bellini
Ingredients (2 drinks)
- 2 cups frozen peach slices
- 2 oz prosecco (for blending)
- 1 oz peach schnapps or peach liqueur (optional)
- ½ oz fresh lemon juice
- ½ oz simple syrup
- ½ cup ice cubes
- 4 oz prosecco, to top
Instructions
- Blend the peaches, 2 oz prosecco, peach liqueur, lemon juice, syrup and ice until smooth.
- Spoon into two flutes or coupes, filling them about two-thirds.
- Slowly top each with 2 oz prosecco.
- Stir once and serve.
Garnish: Peach slice
Glass: Champagne flute or coupe
Tips for the best texture
- Blending a little prosecco adds flavor, but adding most of it at the end keeps the bubbles.
- White peaches are traditional but yellow peaches give a deeper color.
Try a twist
Use frozen raspberries for a Rossini or mango for a tropical bellini.
Blender, frozen drink maker or slush machine?
These amounts are written for a standard countertop blender. In an ice-shaving frozen drink maker, put the ice in the hopper and the liquids and any fruit in the jar, then run a full cycle. In a home slush machine, which freezes the drink itself, leave out the ice, replace it with about 1 cup of cold water or juice, and pour the mixed liquid into the bowl.
