Frozen Aperol Spritz
The Italian aperitivo classic as a bright orange slush: Aperol, prosecco, orange juice and soda.
- 5 min prep
- 2 drinks
- Large wine glass
The spritz is Italy's favorite summer drink, bittersweet, orange and fizzy. Freezing it softens the bitterness and makes it even easier to drink by the pool.
Fresh orange juice adds body so the slush holds together, and a splash of soda brings back the sparkle.

Tips for the best texture
- Pour the prosecco gently down the side of the jar to prevent foaming.
- A green olive on a pick is the classic Venetian garnish if you want to be authentic.
Try a twist
Swap Aperol for Campari for a more bitter, deep red spritz.
Blender, frozen drink maker or slush machine?
These amounts are written for a standard countertop blender. In an ice-shaving frozen drink maker, put the ice in the hopper and the liquids and any fruit in the jar, then run a full cycle. In a home slush machine, which freezes the drink itself, leave out the ice, replace it with about 1 cup of cold water or juice, and pour the mixed liquid into the bowl.
